you may have started to notice a bit of a trend in our nom nom nom section… there is admittedly a distinct leaning towards decadent desserts. but, try as i might, you just can’t eat like that all the time.

i thought it was high time i shared one of my more virtuous recipes – they are embarrassingly outweighed by the good (read: gluttonous) stuff in my repertoire, but i have one or two up my sleeve that are just as jam-packed with taste as they are not-entirely sinful. healthy loaded sweet potato skinsi am a sucker for loaded potato skins. bacon bits, oozing melted cheddar cheese and a great big dollop of sour cream. sigh.

these are the halo version.

i came across this recipe on pinterest originally. they taste like they should be calorific, but being sensible with the cheese measurements, replacing bacon with spinach, not to mention using sweet rather than regular potatoes, transforms them from greasy diner food to weeknight staple.

if i’m just cooking for myself, one sweet potato would more than fill me up, but if there is a male in the house, half each make a great side dish and an awesome alternative to baked or mashed potatoes.
