i work from home a lot, and am always trying to come up with ways to spice up lunchtime – particularly as the kitchen is my favourite place to be, and procrastinating over a recipe sure beats the hell out of actually working.
i came up with this little wrap after getting seriously hungry while browsing the food boards on pinterest. i saw something similar (and now, for the life of me, can’t find it… sorry original author person, i really did try!) and thought that a griddled avocado was a brilliant idea. i used black beans, goat’s cheese and some cucumber for crunch too.


to make the wrap, cut an avocado in half, remove the stone and brush each side with a little olive oil. place on the griddle for a few minutes until it is warm and creamy with delectable charred marks. meanwhile drain and rinse your black beans and sprinkle with some sea salt.

next, place the tortilla on the griddle for a minute each side. while the second side is warming, cut slices of avocado while still in the shell, and scoop them out. place the avocado on one half of the tortilla and crumble goat’s cheese over the top. remove from the griddle, add the black beans and a few slices of cucumber crescents.

fold over and eat in delight. it’s delicious, healthy, and with a great mix of textures – a nice alternative to a mundane sandwich. enjoy!
