Peach Cocktail Recipe

This peach cocktail recipe is great peachy keen drink for hot summer days and relaxing on the porch. It's refreshing and nourishing as it is picture perfect.

Summer days are meant to be savored and enjoyed. Bright sunlight and blue skies are best matched with lazy afternoons relaxing and playing board games. During the heat of the afternoon it's best to keep in the shade or head inside. Preparing food and drinks is a fun way to spend the afternoon.

I remember growing up that my family had a peach tree in the yard. It didn't produce that many peaches, nor were they the best such as the ones you might find in a grocery store. But on some days near the end of the season there would be a few overripe peaches that needed to be eaten as soon as possible. This recipe is the perfect way to make use of overripe peaches. One can also use canned peaches if these are not available.

Now this recipe is for a cocktail but it can easily be made without the alcohol so that anyone and everyone can enjoy it. There is a mint and lime garnish but it can be made without these additions for those who just want a sweet smoothie-like drink.

Ingredients:

4 large peaches overripe or 2 cans of peaches
If you are using canned peaches save the water, if not add a half cup of water and 1/2 cup of white sugar
The juice from 2 large limes
Vodka or an alcohol of your choice
Mint and/or lime for garnish

Instructions:

Add peaches, water, and sugar into a saucepan and simmer on medium heat until caramelized. Mash them around using a wooden spoon until the consistency is smooth.
Stir in the lime juice.
This is the peach lime puree that you can store in the fridge for up to a week or freeze so it lasts the entire summer.
When you are ready to mix the peach cocktail use equal parts peach puree and vodka until you are happy with the consistency.
Garnish with mint and lime.
Drink this peachy keen drink right away. Best served on a hot summer day.
