Lemon and Lavender Tart

  • 4 eggs
  • 1/2 cup fresh lemon juice

  • 1 tablespoon dried lavender flowers

  2. In a large bowl, mix together the flour and sugar for the crust. Cut in the cold butter using a pastry cutter or your fingers, until the mixture resembles coarse crumbs.
  3. Add the egg yolk and ice water, and stir until the mixture comes together to form a dough. Knead the dough briefly on a lightly floured surface.
  4. Roll out the dough to fit a 9-inch tart pan. Press the dough into the bottom and sides of the pan, and trim any excess dough.
  5. In a separate bowl, whisk together the sugar and flour for the filling. Add the eggs one at a time, whisking well after each addition.
  6. Stir in the lemon juice and zest, followed by the dried lavender flowers.
  7. Pour the filling into the prepared crust, and smooth the top with a spatula.
  8. Bake the tart for 35-40 minutes, or until the filling is set and the crust is golden brown.
  9. Let the tart cool to room temperature before serving.
